I once had the pleasure of spending a weekend at the beautiful Radisson Blu Hotel in GRA Ikeja (Formerly Renaissance Hotel) and during my stay, I had this amazing dish of stuffed plantain. Till date, I have not come across that delicacy in all the fancy restaurants I frequent.
While this Baked Yam and Egg recipe from Ndudu by Fafa, a fave Ghanaian food blogger, is nothing close to the aforementioned dish, its look reminded me so much of it that I have vowed to try it out.
The recipe is ridiculously simple, as it makes use of already prepared condiments. If you’re like me and you like the idea of stuffed food or egg and beef dumplings, then watch and let’s make this together!

Lamb Stew/ Chicken Stew
